Butternut Squash Omelette with Tomatoes, Goat Cheese, and Scallions

I was in the mood to get creative so I threw these things together, hoping it would turn out good.  It did!
Lots of flavors that combined nicely.

I sauteed the squash in a little bit of grapeseed oil until it got tender.  Added fresh diced tomatoes and scrambled eggs.  When the eggs were almost done, I added some scallions.  Crumbled goat cheese in during the last minute of cooking...then topped with some raw scallions and crushed toasted hazlenuts.  SUPER YUMMY.

Of course, I served it with black beans and potatoes. (I should probably come up with some new sides so all of my pictures don't look the same!)
