Mexi Bowls

My friend Mallory gave me the idea to make this.  There are a million variations to this recipe, so add and omit to your liking!  Here's what I did:

In a slowcooker, I made chipotle chicken.  Added a few chicken breasts to the pot....a can of chipotle chiles in adobe sauce...and some chicken broth.  Let it cook until it was super tender. Pulled it apart with a fork.

Layer a plate with rice, black beans, sauteed bell peppers and onions, spring mix, diced tomatoes, chipotle chicken, guacamole, sour cream.

Eat with a fork, with chips, or both.

I ate leftovers the next day, but switched up the chicken for some sauteed shrimp (pictured).  Mmm.
